Executive Chef / Owner

Shameless in the kitchen, Veracruz, Mexico-born Flor Franco's culinary roots sprouted at an early age when her father shared the subtle secret of great cuisine: sourcing high-quality ingredients from the prime farmland on which she grew up. That ethos translates into every fresh and flavorful dish she creates today, using ingredients from some of her dearest friends: ranchers, farmers and artisans.

Franco is founder/partner of San Diego- and Baja-based Indulge Contemporary Cuisine; culinary director/partner at internationally acclaimed eco- anti-resort Encuentro Guadalupe, where she recently opened the highly lauded Convivia Cantina Artesenal; and member of the board of directors of FundaciĆ³n Encuentro, the nonprofit arm of the company. Oh, and as of late, she is in the process of transforming her Chula Vista catering lab into an intimate and upscale showcase for modern Mexican food and Baja wine -- Zarco Comida de Baja.

She's an active member of Slow Food USA; Culinary Director of Berry Good Night, an annual event designed to galvanize the movement to create a fair food system in San Diego and the surrounding region; and chairperson of the annual gala of WILDCOAST, an international conservation team that conserves coastal and marine ecosystems and wildlife.

Franco's keen sensibilities in design and food attract clients from around the world, who seek food with heart, driven by sustainable ingredients. She is one of only a handful of caterers that specializes in Glatt Kosher, the strictest standard of kosher cooking, which entails several days of preparation and execution.

After earning a double major in public relations and marketing, Franco became PR Director for a major US Custom Broker, managing the largest group of Mexican growers; she subsequently became PR Director for two San Diego event magazines, while widening her expertise by becoming a catering and event consultant. Franco has designed distinguished events for notable brands both regionally and abroad and has become a conduit for cross-border culinary collaborations between Mexico and the US, representing Baja Food & Wine in the states.

With the firm belief that good, nutritious food should be accessible to all, Franco established Kitchen Commandos, a program inspired by her time with Alice Waters at her Edible Schoolyard Academy. Kitchen Commandos provides families with the tools to change their eating habits. In 2011, she co-founded the Front Burner Fund, a nonprofit that raises funds to supplement the health costs and emergency medical needs for 'back of the house' restaurant staff. She is also chairperson of Harborfest and was a guest chef at the Sundance Film Festival's ChefDance for two years. In a profession dominated by men, Franco strives to ensure women are well represented. She is a member of Les Dames d'Escoffier International, a philanthropic society of professional women leaders in food, fine beverage and hospitality.

Franco's kitchen, in the heart of downtown Chula Vista, is known for attracting passersby with tantalizing aromas and exquisitely prepared dishes, created in a beautifully artistic setting. Franco's passion is visible in all facets of her life.
