I am Texas born. As a young adult not making the best choices led to trouble times. School and education was not the problem, it was the lack of direction.One day, announcements were told about a trade school. Project Phoenix, which allowed students from all over San Antonio high schools to join any particular trade that was offered. That was my way out. I finished my high school diploma while learning 101 Culinary Arts fundamentals. And til this day I have not left the industry. It's been long and extremely difficult. I feel like if I had the support and fire I have today, 15 years ago I probably would have already established my name and my own business. I've worked with some really great cooks and chefs along the way, building relationships and knowledge which has grown into immense passion for the culinary industry. It has taught me a lot about how to conduct myself under pressure while gaining respect from co-workers and the food at hand. It's not over. I'm in it to win it!! Extremely excited.
