The Art of the Plate

The Chefs’ Roll Art of the Plate Contest sponsored by Cardinal International family of brands: Chef & Sommelier, Arcoroc, and Tiger-Glass had hundreds of chefs from across the US participate to receive a free dish, or canvas if you will. Once received, they plated their most stunning dish and entered a photo of it via our online contest. Prizes included a case of Chef & Sommelier Reveal’Up stemware, an Aura Knifeworks “ONE” chef knife, a JENDE Industries leather knife roll, a set of knives, a custom embroidered Chef Works apparel set,  PolyScience Culinary Smoking Guns, and a Made for Chefs walnut magnetic knife holder.

1st place
1st PLACE: “Fall Bones on the Frozen River” by Chef Katie Weinner
Plated on Tiger-Glass: langustino, Empire apple, local tomatillo, bone marrow vinaigrette and last of the season yellow tomato ‘yolk’ with nasturtiums. 2nd place
2nd PLACE: “Oak Grilled Santa Barbara Mackerel” by Chef Avery Hardin
Plated on Arcoroc Terrastone: oak grilled Santa Barbara mackerel, herb pangritata, pickled red onion rings, radish, turmeric aioli, Serrano chile. Chef is from Scarlet Begonia Restaurant in Santa Barbara, CA. Congratulations Chef, you won a JENDE “Reaper” leather knife roll!

3rd place
3rd PLACE “Surf and Soil” by Chef Dennis Bernardo
Plated on Tiger-Glass: seared diver scallops, roasted baby beets, roasted baby carrots, sautéed maitakes, celery root puree, squid ink beet puree, brown butter masago powder, micro pea tendrils, bulls blood, micro cilantro, shaved raw beets. Chef is from Bourbon Steak in Los Angeles, CA. Congratulations Chef, you won a case of Chef & Sommelier Reveal’Up stemware.

4th place
4th PLACE “Sea & Land in Fall” by Chef Jonas Corpuz
Plated on Tiger-Glass: Paprika poached Mexican octopus, roasted & pickled beets, kafir lime creme fraiche, English peas, fresh sea beans. Chef is from The Fairmont Grand Del Marin Del Mar, CA. Congratulations Chef, you won a custom embroidered Chef Works coat and apron!

5th place
5th PLACE “Seafood Nero Risotto” by Chef Jesse Keopke
Plated in a Chef & Sommelier Season’s Bowl: Black risotto with a champagne sauce, fresh baby octopus, cockle clams, large whole white shrimp, with a large cherrystone clam accompanied with cherry tomatoes, baby squash, white beech mushrooms, garnished with chives. Chef is from Windsor in Phoenix, AZ. Congratulations Chef, you won a PolyScience Culinary Smoking Gun!

6th PLACE: “Violet You’re Violet!” by Chef April O’Neill
Plated in a Chef & Sommelier Season’s Bowl: Vanilla panna cotta, violet gel, licorice gel, licorice, vanilla creme, shortbread, and violets. April is a Private Chef in New Fairfield, CT. Congratulations Chef, you won a PolyScience Culinary Smoking Gun!
