Sweet Potato Tots with Mole

Sweet Potato Tots

INGREDIENTS

METHOD

  1. Deep fry from frozen at 350f until golden brown.

Mole for Mole Mayo

INGREDIENTS

  • 1/2 cup Dried fruit
  • 2 tbsp. Sesame seeds
  • 4 cloves Garlic
  • 2 ea. Charred corn tortillas
  • 8-10 ea. Dried chiles (mix of negro, morita, pasilla, de arbol)
  • Stock
  • Oil for frying

METHOD

  1. In a wide pan add oil about 1/4-1/2 inch thick. Fry the chile’s, add in sesame, dried fruit, garlic, charred corn tortillas, and fry for another minute until garlic and sesame are toasted.
  2. Add to a blender and puree slowly while pouring in the stock to thin. Thin to desired consistency. Season to taste.
  3. Serve as is or mix with mayo.
