Mr. Frank’s Seasonings Tropical Sriracha scallop aguachile with cilantro, cucumbers, and chiles

Aguachile
INGREDIENTS
- 1 ea. Young coconut
- Mr. Frank’s Tropical Sriracha
- juice from 2 limes
- 1-2 ea. Serrano peppers -save some thin slices for plating
- Cilantro for garnish
- Cucumbers, sliced
METHOD
- Open the coconut and save the water. Remove the edible flesh and blend with the coconut water to emulsify. Add in the lime juice 1-2 serrano peppers, and 1/3 cup approx. of Mr. Frank’s Tropical sriracha.
- Plate up with sliced scallops, cucumbers, cilantro, and sliced serrano. Top scallops with Mr. Frank’s Tropical sriracha for flavor and color.
