Congrats to the Round 4 winners of the McCain SureCrisp Showdown!
In Round 4 we challenged 8 chefs to come up with a regionally inspired dish based on their favorite team’s city/state while using McCain SureCrisp Waffle Fries. These 4 chefs took home the win – each will receive a Meglio knife, a Chef’s Roll Apparel Knife Roll and Chef’s Roll swag. We will now be reviewing all of their entries from the showdown to decide who takes home the grand prize of a Polyscience Control Freak! Grand Prize winner will be announced Monday, April 4th.
Chowder Fries
Being a San Francisco Giants fan it’s all about chowder in a bread bowl. SureCrisp Waffle Fries, house made clam chowder, fresh Littleneck clams, shaved fennel, crispy onion, and celery leaf.
Waco Sic Em Bears BBQ Trio

Trio of Waco flavors. BBQ SureCrisp Waffle Fries topped three ways:
-House-made brisket jam, pickle, & pimento cheese deviled egg.
-Texas Twinkie. Jalapeño filled with slow smoked brisket & house-made pimento cheese, wrapped with bacon and smoked.
-Cherry Dr. Pepper brisket jam topped with smoked jalapeño cheddar sausage. Topped with pickled red onion. Accompanied by house-made cherry Dr. Pepper BBQ sauce & pimento cheese aioli. Don’t forget the Dr. Pepper Float!
Huevos Rancheros Divorciados – Dallas Cowboys and the Texas Rangers
Growing up in Dallas I was obsessed with the Dynasty era Dallas Cowboys and loved going to see the Texas Rangers play. What screams Texas more than smoked Beef Brisket and Tex Mex? I decided on doing this dish divorciados style with two sauces for the two teams, but also, who doesn’t love and hate the Cowboys at the same time? In place of the traditional tostadas, I replaced them with waffle fries tossed in salt and chili powder. Texas Style BBQ Beef Brisket, Sunny Side Up Quail Eggs, Cowboy Beans, Dried Chili Salsa, Salsa Verde, Crema, Avocado Coins, Serrano Chile, Queso Fresco and Cilantro on a Bed of Chile Spiked (as in touch down) SureCrisp Waffle Fries.
Spurs Waffle Fry Pie

McCain SureCrisp Waffle fries cooked in beef tallow/duck fat seasoned with Hatch chili powder.
Topped with Texas red chili, a chipotle crema, guacamole, pico de gallo, sour cream, pickled onions, cotija cheese.
