Jerk wontons with jerk marinated short ribs and Big Banana Plantain Tidbits.

Jerk Marinade
INGREDIENTS
- 1 cup Soy sauce
- 1 cup Water
- 1 cup Brown sugar
- 3-4 ea. Green onions, chopped
- 8-10 cloves Garlic
- 5-6 ea. Habanero peppers
- 1 large thumb Ginger, peeled and rough chopped
METHOD
- Blend in a food processor. Reserve.
Short Ribs Wontons
INGREDIENTS
- 4 ea. Short ribs
- Jerk marinade
- Big Banana Plantain Tidbits
- Wonton wrappers
METHOD
- Sear short ribs. Let cool then place in a vacuum seal bag. Pour in enough marinade to coat. Seal and cook sous vide for 24hrs at 85c/185f.
- Tip: With remainder marinade place in a sauce pan, bring to a light boil and add a slurry to thicken. Use as a sauce/dip.
- Shred your cooked short ribs. Mix with plantain tidbits. Place on wonton wrappers and seal. Fry at 350f until golden brown.
