Patatas bravas made using United Flavors® Sweet Potato Tater Tots fried to golden brown and served with a roasted garlic mayo and spicy tomato sauce.

Garlic Mayo
INGREDIENTS
- 2 cups Neutral oil
- 2 ea. Eggs
- 1 tsp. Dijon
- 6-8 cloves Roasted or confit garlic
- 2 tsp. Lemon juice
METHOD
- Place ingredients in a mason jar and blend with a stick blender until smooth and creamy.
Spicy Tomato Sauce
INGREDIENTS
- 1 pint Grape tomatoes
- 2 ea. Shallots, sliced thin
- 8 cloves Garlic, sliced thin
- 2 ea. Fresno chlies
- 1-2 tsp. Chili flake
- 1 tsp. Tomato paste
- 1 tbsp. Sherry vin
METHOD
- Sauté the shallots and chilies for 2-3 min.
- Add in the garlic and sauté 1 min.
- Add in grape tomatoes and cook 3 minutes.
- Add the chili flake and chili paste and cook 1 min.
- Deglaze with the vinegar.
- Break up the tomatoes to release some of that juice.
- Add 1/2 cup water if needed. Serve rustic or add into a blender and purée.
Sweet Potato Tots
INGREDIENTS
- United Flavors® Sweet Potato Tots
- Tomato Sauce
- Garlic Mayo
- Parsley
METHOD
- Fry the sweet potato tots and build with the spicy tomato sauce, mayo, and chopped parsley.
