Lobster Guacamole with Candied Tequila Lime Bacon

Candied Tequila Lime Bacon

INGREDIENTS

  • 8 slices Hormel Black Label Bacon
  • 2 oz. Patron SilverTequila
  • 1 tbsp. Brown Sugar
  • 2 tsp. Tajin Seasoning
  • 1 tsp. Fresh Lime Juice
  • 1 ea. Jalapeño, thinly sliced into circle cuts

DIRECTIONS

  1. Preheat oven to 350˚F.
  2. On a parchment lined baking sheet, place slices of bacon evenly spread out.
  3. In a small bowl, mix tequila, brown sugar , tajin seasoning and lime juice.
  4. Brush mixture on top of bacon and top with sliced jalapeños ( 2-3 slices per slice of bacon).
  5. Place Bacon in oven and cook for 10-15 min until bacon begins to get crispy & sugar begins to caramelize. Don’t over cook..can burn easily!
  6. Once bacon is done, remove from oven an let cool. Once cooled, chop into small crumbles and set aside.

Lobster Guacamole

INGREDIENTS

  • 6 ea. Avocados, pealed, chopped and slightly mashed
  • 10 oz. Fresh Lobster, cooked, cut into bite sizes pieces
  • 2 ea. Roma Tomatoes, seeded and chopped
  • 1 ea. small Red Onion, chopped
  • 1 ea. Jalapeño, seeded and diced
  • 2 tbsp. Cilantro, chopped
  • 1 ea. Lime, juiced
  • tt. Pink Himalayan Salt
  • 2 cloves Garlic, minced
  • Tajin Seasoning

DIRECTIONS

  1. Mix in red onions, diced jalapeños, tomatoes, garlic, cilantro & lime juice. salt to taste.
  2. Then add in your lobster & candied bacon, give it a slight mix and chill for 15 min.
  3. Garnish with lobster, candied bacon, Tajin seasoning and cilantro.
  4. Serve with toasted garlic crostini, tortilla chips or just eat it with a spoon.
