Salmon from the Copper River is world-famous. Not only is it the first commercially available wild salmon of Alaska’s summer salmon season, but it is renowned for being the richest, most luxurious salmon in the world. While Copper River King is most widely known, the region is actually home to three species of Copper River salmon: king, sockeye, and coho! The Copper River Coho Chef Competition is your chance to get to know the Copper River region’s fall bounty intimately. Ten lucky Chefs will receive one fresh whole Copper River Coho salmon, harvested only days prior to shipping, fresh from the pure, icy cold ocean waters where the Gulf of Alaska meets the Copper River. Peak harvest for Copper River Coho salmon is mid-August through late September, making it the perfect grand finale for Alaska’s five-month fresh salmon season. Milder and more delicate than wild king or sockeye, Copper River Coho is a highly versatile fish with unlimited potential. So, register today for a chance to participate, and prepare to get wild.

WHY COPPER RIVER COHO FOR FOODSERVICE?

COPPER RIVER COHO, THE HARBINGER OF FALL

In August, Copper River fishermen turn their attention to the last great salmon of the season: Copper River Coho. Copper River Coho’s timing makes it the perfect fish for Labor Day promotions and to pair with Fall’s bountiful harvest. The season runs through late-September and is the grand finale to Alaska’s fresh wild salmon season. Copper River Coho is harvested by the same quality-minded, small-craft harvesters who fish for Copper River King and Sockeye, so you can rest assured the quality and handing is equally superior. Copper River Coho possesses an approachable, mild flavor and delicate texture, but with the rich, luxurious oil content that defines and differentiates Copper River salmon. This fish is a Fall favorite and pairs well – just as nature intended – with seasonal root vegetables and mushrooms.
