Baja Oysters

INGREDIENTS
- 12 ea. Open fresh oysters
- 300 ml. Soy sauce
- 100 ml. Sesame oil
- 1 ea. Chile serrano
- 2 ea. Green onions
- 3 spoons Cilantro, chopped
- ½ ea. Red onion
- 1 ea. Orange, juiced
- 4 ea. Lemons, juiced
- 4 ea. Limes, juiced
- Microgreens
DIRECTIONS
- Chop thin the serrano, cilantro, red and green onions.
- Mix the Soy sauce with the citric, add the chopped serrano’s, onions and cilantro. Let it rest for 10 minutes.
- Then with a whisk slowly add the sesame oil to incorporate.
- Server one spoon over the oyster and decorate with micro greens.
