INSPIRATION

Tio Jorge ® Hawaiian Tostones by MIC Food are perfect for high volume foodservice. The flavor is as good as the fresh product with an incredible texture. Crispy on the outside, yet still moist in the inside. The Tostones make for a great bun for a chorizo burger. We all love a good toasted bun, but if you’re as slammed as you probably are, you’re always looking for ways to free up some room on the flattop. Searing buns seems to take up an incredible amount of space. This is an alternative for a quick pickup, (only fries in about 3 minutes from frozen) and gives you the same crispy exterior and soft interior to soak up all the moisture in your sandwich that you look for in your favorite bun. One of the best parts: they are incredibly cost effective! Using these Tostones as a bun gives a fun option for your clientele looking to try something delicious and different.”

Caramelized Pineapple & Chile Crema

INGREDIENTS

  • ½ small Pineapple
  • 1 large Green Chile
  • ½ c Mexican Crema
  • 1 tsp. Smoked Paprika
  • Salt & Pepper, to taste

METHOD

  1. Caramelize pineapple and green chile on a grill until blistered.
  2. Transfer to a food prosseser and puree until smooth.
  3. Transfer mixture to a small bowl.
  4. Fold in crema and smoked paprika until fully incorporated. Season to taste.


Cactus Pear Salsa

 INGREDIENTS

  • ¼ c Cactus Pear
  • 3 tbsp. Pineapple Quince
  • 2  Chiles, moderate heat
  • ½ bunch Cilantro
  • 3 tbsp. Carbonated Sangria
  • 3 tsp. Spiceology® Chili Margarita Seasoning
  • Salt & Pepper, to taste

METHOD

  1. Small dice all produce.
  2. Combine in a bowl with sangria. Season to taste.
  3. Allow to chill for one hour.



MIC Foods Tostones

 INGREDIENTS

METHOD

  1. Fry Tostones for about 3-5 minutes until crispy.
  2. Season with Spiceology Chile Margarita Seasoning, salt and pepper, to taste.


TO ASSEMBLE

INGREDIENTS

  • Seared Chorizo Links
  • Cotija
  • Finger Lime
  • Avocado

PLATING METHOD

  1. Place your bottom Tostones “bun” down.
  2. Slather with about 2 tbsp. Caramelized Pineapple & Crema.
  3. Place your seared chorizo down, top with avocado, Cactus Pear Salsa, cotija, finger lime, and top with Tostones “bun”.
