Founded: Austin (formerly Culinary Academy of Austin) was founded in 2001; Boulder (formerly Culinary School of the Rockies) was founded in 1994. Both became Auguste Escoffier School of Culinary Arts campuses in 2010.

CULINARY ARTS DIPLOMA:
Training spans a culinary timeline to include more traditional recipes as well as contemporary cuisine and dishes, based on Auguste Escoffier’s – the father of modern cooking – techniques and methods. Inspired by this timeless artistry, students can refine their own unique culinary style, from preparation methods to plating style.
PASTRY ARTS DIPLOMA:
Students engage in the science and artistry of baking and pastry creation in a state-of-the art kitchen where personal style and technique in pastry and dessert preparation and presentation can be explored. Small class sizes encourage one-on-one mentoring to help students gain the fullest benefit from real-world pastry education.
ONLINE CULINARY ARTS DIPLOMA:
Offered through the Escoffier Boulder campus, this innovative online program allows students across the country with a GED, and access to a kitchen, computer and internet, the chance to focus on business management and entrepreneurship as well as classic cooking methods and techniques. With online chef educators located throughout the US, lectures take place via the school’s online campus, where students explore everything from palate development and menu planning to budget management, and kitchen design. The program culminates in a six-week externship prior to graduation.
The Farm To Table® Experience
With a focus on local sustainability, the administration of the Auguste Escoffier School in Austin pioneered a certified Farm To Table® Experience, demonstrating a true commitment to great food and their belief that it begins with the first links in the food chain—farmers, ranchers, artisans, vintners, producers and purveyors. Now available as part of the Culinary Arts Programs at both campus locations, during a dedicated six-week block students go behind the scenes so they can understand what it takes to bring locally produced ingredients into the kitchen. In addition, students are also exposed to a variety of farming and production methods, the advantages of buying local and how to make the best sustainable and ethical ingredient choices throughout their culinary career.
