Sweet and crunchy Filipino Banana Cue featuring Big Banana® Sweet Plantain Slices

Filipino Banana Cue
INGREDIENTS
- 1 package Big Banana by MIC Food Plantain Slices (no need to peel or slice!)
- 1 cup Brown sugar (preferably muscovado or light brown sugar)
- Vegetable oil, for frying (enough to submerge the plantains)
METHOD
- Heat the oil:
- In a large frying pan or wok, heat enough vegetable oil over medium-low heat to submerge the plantain slices (about 1 inch of oil). The oil should be hot but not smoking.
- Caramelize the sugar:
- Add the brown sugar to the hot oil and stir gently. Wait for the sugar to start melting and caramelizing, turning into a thick syrup.
- Fry the plantains:
- Add the pre-sliced plantains into the caramelized sugar and oil. Gently fry them in the syrup, turning the plantains to ensure they are evenly coated with the caramelized sugar.
- Continue to fry for about 2-3 minutes, or until the plantains have a deep golden color and are covered in a sticky, shiny caramel coating.
- Drain and serve:
- Remove the caramelized plantains from the oil and place them on a plate lined with paper towels to drain excess oil.
- For a fun presentation, you can skewer the banana cue onto individual skewers.

- Serve the crispy, caramelized plantains immediately as a delicious snack or dessert!
