Banana Cue

Sweet and crunchy Filipino Banana Cue featuring Big Banana® Sweet Plantain Slices

Filipino Banana Cue

INGREDIENTS

  • 1 package Big Banana by MIC Food Plantain Slices (no need to peel or slice!)
  • 1 cup Brown sugar (preferably muscovado or light brown sugar)
  • Vegetable oil, for frying (enough to submerge the plantains)

METHOD

  1. Heat the oil:
    • In a large frying pan or wok, heat enough vegetable oil over medium-low heat to submerge the plantain slices (about 1 inch of oil). The oil should be hot but not smoking.
  2. Caramelize the sugar:
    • Add the brown sugar to the hot oil and stir gently. Wait for the sugar to start melting and caramelizing, turning into a thick syrup.
  3. Fry the plantains:
    • Add the pre-sliced plantains into the caramelized sugar and oil. Gently fry them in the syrup, turning the plantains to ensure they are evenly coated with the caramelized sugar.
    • Continue to fry for about 2-3 minutes, or until the plantains have a deep golden color and are covered in a sticky, shiny caramel coating.
  4. Drain and serve:
    • Remove the caramelized plantains from the oil and place them on a plate lined with paper towels to drain excess oil.
    • For a fun presentation, you can skewer the banana cue onto individual skewers.
  5. Enjoy:
    • Serve the crispy, caramelized plantains immediately as a delicious snack or dessert!
