Croutons
INGREDIENTS
- Sourdough or ciabatta bread, cubed
- Cottonseed oil
- Italian seasoning
METHOD
- Cube desired amount of croutons (approx. 2 cups is plenty).
- Toss in a drizzle or two of cottonseed oil and about 1 tbsp approx. of Italian seasoning, salt, and pepper to taste.
- Bake in the oven at 350f until golden brown
Chicken
INGREDIENTS
- 2 ea. Chicken breasts patted dry
METHOD
- Add cottonseed oil in a pan.
- Sear the breast on both sides and finish in the oven at 350f until cooked through.
- Let rest and slice.
Caesar Dressing in a Jar
INGREDIENTS
- 3 ea. Peeled Garlic Cloves, crushed
- 4 ea. Individual anchovies, oil drained
- 1 tbsp. Dijon Mustard
- 1/4 cup Lemon juice, plus more to taste if desired
- 2 ea. Egg yolks
- 1/4 cup Grated Parmesan
- 1 1/4 cup Cottonseed oil
METHOD
- Combine all ingredients in a wide-mouthed mason jar.
- Using an immersion blender, blend until dressing is smooth and creamy.
- Season to taste with lots of cracked pepper and salt as needed.
