Roasted Chairman’s Reserve pork loin with fresh apple sauce, sautéed apple, and pickled onions.

Pork Loin
INGREDIENTS
- Chairman’s Reserve® Pork Loin
- Salt and pepper and spices of your choice
METHOD
- Truss, season liberally, and sear in a pan.
- Finish in the oven at 375f until desired temperature is reached 145f is a good base to pull and let rest for 10min
Apple Sauce
INGREDIENTS
- 3-4 ea. Apples
- pinch of Xanthan gum (optional)
- 1 tsp. of each: Cumin, Cinnamon, Garlic powder, Onion powder (mix)
METHOD
- Place apples in a juicer. Add pulp and juice into a sauce pan. If not an option place into food processor. You may need to transfer to a blender after food processor. We just need to puree the apples (You can even cut them up and cook them first then puree).
- Add 1/2 tsp of the “spice mix” and salt and cook gently for 10 minutes. Taste, add more spices and salt if needed.
- Blend in xanthan gum to help hold emulsion.
Serve with sautéed apple slices and pickled onions
