Quarantined – Cholula Steak and Eggs

Steak and eggs with magical beans.

Steak

INGREDIENTS

  • 2-12 oz. NY Strip
  • 1 tbsp. Smoked paprika
  • 1 tsp. Cumin
  • Salt and pepper

METHOD

  1. Season steak on cook to desired temperature.

Beans

INGREDIENTS

  • 1 part Pinto beans, soaked overnight (I used about 1 quart)
  • 1 part Garlic and onion
  • stock to cover (about 1-1 1/2 inch above)
  • 1 tbsp. Cholula to finish
  • 2 tbsp. Lard to finish

METHOD

  1. Cook onion, garlic, and beans til beans are just past tender.
  2. Puree with a stick blender and add lard and cholula to finish.

Garnish with a fried egg and more cholula.
