Roasted Pork Loin and Campfire Beans

Pork Loin

INGREDIENTS

METHOD

  1. Season the loin liberally with your favorite spices.
  2. Hang and slow roast until it reaches your desired temperature or an internal temp of 165f.

Campfire Beans

INGREDIENTS

  • 1 pint Onion
  • 1 pint Bell pepper
  • 2 tbsp. Garlic minced
  • 1 cup (approx) Pork trimmings
  • 1 quart Pinto beans

METHOD

  1. Soak beans overnight
  2. Sear trimmings. Add in and sauté onions, garlic, bell pepper. Add in beans and stock or water and cook until tender. Continuously check and stir.
  3. Serve with charred broccolini.
