Fire-roasted pork loin with campfire beans and charred broccolini .

Pork Loin
INGREDIENTS
- 1 ea. Chairman’s Reserve Prime Pork Loin
METHOD
- Season the loin liberally with your favorite spices.
- Hang and slow roast until it reaches your desired temperature or an internal temp of 165f.
Campfire Beans
INGREDIENTS
- 1 pint Onion
- 1 pint Bell pepper
- 2 tbsp. Garlic minced
- 1 cup (approx) Pork trimmings
- 1 quart Pinto beans
METHOD
- Soak beans overnight
- Sear trimmings. Add in and sauté onions, garlic, bell pepper. Add in beans and stock or water and cook until tender. Continuously check and stir.
- Serve with charred broccolini.
