Sweet Potato Tots Patatas Bravas

Patatas bravas made using United Flavors® Sweet Potato Tater Tots fried to golden brown and served with a roasted garlic mayo and spicy tomato sauce.

Garlic Mayo

INGREDIENTS

  • 2 cups Neutral oil
  • 2 ea. Eggs
  • 1 tsp. Dijon
  • 6-8 cloves Roasted or confit garlic
  • 2 tsp. Lemon juice

METHOD

  1. Place ingredients in a mason jar and blend with a stick blender until smooth and creamy.

Spicy Tomato Sauce

INGREDIENTS

  • 1 pint Grape tomatoes
  • 2 ea. Shallots, sliced thin
  • 8 cloves Garlic, sliced thin
  • 2 ea. Fresno chlies
  • 1-2 tsp. Chili flake
  • 1 tsp. Tomato paste
  • 1 tbsp. Sherry vin

METHOD

  1. Sauté the shallots and chilies for 2-3 min.
  2. Add in the garlic and sauté 1 min.
  3. Add in grape tomatoes and cook 3 minutes.
  4. Add the chili flake and chili paste and cook 1 min.
  5. Deglaze with the vinegar.
  6. Break up the tomatoes to release some of that juice.
  7. Add 1/2 cup water if needed. Serve rustic or add into a blender and purée.

Sweet Potato Tots

INGREDIENTS

  • United Flavors® Sweet Potato Tots
  • Tomato Sauce
  • Garlic Mayo
  • Parsley

METHOD

  1. Fry the sweet potato tots and build with the spicy tomato sauce, mayo, and chopped parsley.
