Truffled Leaks
INGREDIENTS
- 3 ea. Baby leeks, quartered and sliced
- 1 cup approx. Cream, to cover
- Black truffle shavings
METHOD
- Saute leeks for 2 minutes.
- Add in cream and reduce to thick consistency. F
- old in truffle shavings and quenelle onto the plate.
Sear a steak to desired temperature and saute some broccoli rabe in the steak fat.
