Ube Honey Ice Cream & Bubble Waffle Cone

Ube Ice Cream

INGREDIENTS

  • 1/3 cup Honey
  • 5 ea. Egg yolks
  • 1 cup Heavy cream
  • 1 cup Whole milk
  • 1 tsp. Vanilla extract
  • 1 tsp. Ube extract
  • ¼ cup Ube halay

METHOD

  1. Heat heavy cream and whole milk in a sauce pan until cream begins to scold. Remove from heat.
  2. Whisk egg yolks and honeyr in a small bowl until a smooth. Temper the yolks by adding 1/4 cup of the hot cream and whisk until it turns a smooth and uniform yellow color. Pour the eggs into the pan with hot cream.
  3. Add the vanilla extract and ube extract.
  4. Turn the heat back on. Whisk until thickens.
  5. Pour the cream through a fine mesh sieve into a large bowl. This will get rid of any egg or milk solids in the cream.
  6. Add the ube halaya. Use an immersion blender to incorporate it into the cream. You can also use a regular blender for this step.
  7. Cool the cream down to room temperature and then put it in the fridge to cool completely. The cream should be in the fridge for about 6-8 hours. This helps create a creamier texture.
  8. Pour the cream into an ice cream maker and churn for 10-15 minutes. The resulting ice cream should be slightly harder than soft serve.
  9. Spoon the ice cream into a freezer safe container and freeze overnight.

Bubble Waffles

INGREDIENTS

  • ¾ cup All-purpose flour
  • 1 tsp. Baking powder
  • 1 tsp. (5 mL) Cornstarch
  • ⅛ tsp. Salt
  • 1 ea. Egg
  • 1/3 cup Honey
  • ¼ cup Milk
  • ¼ cup Water
  • 1 tsp. Vanilla extract
  • 2 tbsp. Unsalted butter, melted

METHOD

  1. In a bowl combine the flour, baking powder, cornstarch, and salt; whisk to combine. Add egg, honey, milk, water, and vanilla. Gradually whisk the ingredients until well combined, then whisk in the melted butter.
  2. Spray each side with oil. Pre-heat Waffle Puff Pan on medium heat for 3 minutes. Add ¾ cup of waffle batter filling in all the bubbles. Flip the waffle maker over and cook for 2-4 minutes. Flip the waffle maker again and cook for 2-4 minutes or until golden brown.
  3. Remove with Fork and let rest 1 minute to allow the bubble waffle to crisp. Then top with your favorite toppings.
