Ube Honey Crunch Ice Cream with freeze-dried honey crunch and honey bubble waffle cone.

Ube Ice Cream
INGREDIENTS
- 1/3 cup Honey
- 5 ea. Egg yolks
- 1 cup Heavy cream
- 1 cup Whole milk
- 1 tsp. Vanilla extract
- 1 tsp. Ube extract
- ¼ cup Ube halay
METHOD
- Heat heavy cream and whole milk in a sauce pan until cream begins to scold. Remove from heat.
- Whisk egg yolks and honeyr in a small bowl until a smooth. Temper the yolks by adding 1/4 cup of the hot cream and whisk until it turns a smooth and uniform yellow color. Pour the eggs into the pan with hot cream.
- Add the vanilla extract and ube extract.
- Turn the heat back on. Whisk until thickens.
- Pour the cream through a fine mesh sieve into a large bowl. This will get rid of any egg or milk solids in the cream.
- Add the ube halaya. Use an immersion blender to incorporate it into the cream. You can also use a regular blender for this step.
- Cool the cream down to room temperature and then put it in the fridge to cool completely. The cream should be in the fridge for about 6-8 hours. This helps create a creamier texture.
- Pour the cream into an ice cream maker and churn for 10-15 minutes. The resulting ice cream should be slightly harder than soft serve.
- Spoon the ice cream into a freezer safe container and freeze overnight.
Bubble Waffles
INGREDIENTS
- ¾ cup All-purpose flour
- 1 tsp. Baking powder
- 1 tsp. (5 mL) Cornstarch
- ⅛ tsp. Salt
- 1 ea. Egg
- 1/3 cup Honey
- ¼ cup Milk
- ¼ cup Water
- 1 tsp. Vanilla extract
- 2 tbsp. Unsalted butter, melted
METHOD
- In a bowl combine the flour, baking powder, cornstarch, and salt; whisk to combine. Add egg, honey, milk, water, and vanilla. Gradually whisk the ingredients until well combined, then whisk in the melted butter.
- Spray each side with oil. Pre-heat Waffle Puff Pan on medium heat for 3 minutes. Add ¾ cup of waffle batter filling in all the bubbles. Flip the waffle maker over and cook for 2-4 minutes. Flip the waffle maker again and cook for 2-4 minutes or until golden brown.
- Remove with Fork and let rest 1 minute to allow the bubble waffle to crisp. Then top with your favorite toppings.
