My life’s vision marks the path to knowledge as the thread that connects all of my dimensions as an individual. Not the type of knowledge that is inert and unchanging, that claims an absolute truth; but instead, one which is inexhaustible, fluctuating, dynamic and most importantly, that instills passion. Continuous learning is my lifestyle.
Ever since Socrates said, "As for me, all I know is that I know nothing”, the feeling of tireless immersion in knowledge was defined. The feeling that knowledge inspires, the desire of wanting to learn more and more, and the realization that the more we know, the more we want to learn; the same feeling that I get every morning when I wake up. But learning is not a process done in solitude, it is a shared experience that requires collaboration and is bathed in the various ways to understand reality. The kitchen, seen through my eyes, results in an ongoing feeling of curiosity and the ability to surprise oneself.
From my gastronomic point of view, cooking is an artistic process, since you are able to create worlds of flavors from a single ingredient, evoking a cosmos of sensations. One of my inspirations, Salvador Dali, said a phrase that I relate to gastronomy: "The one true artist is one who is able to paint extraordinary scenes in the middle of an empty desert.” The culinary world is about showcasing the ingredients, creating sensory links, letting them be, injecting essence, and turning them into mute shouts of existence, even after their own existence. Gastronomy is a vehicle for emotions: it can bring you back to the best memories and evoke haunting nostalgia. Cuisine is like a scene of a Chaplin film, silently crawling into spectator’s smiles.
