Plantain
INGREDIENTS
- MIC Food Sweet Plantain
METHOD
- Sear in a pan.
Black Eyed Peas
INGREDIENTS
- 1 cup Black eyed peas
- 4 cups Water
- 1 tsp. Cumin
- 1 tsp. Paprika
- 1/2 ea. Onion
- 3 ea. Garlic cloves
- Green onion
METHOD
- Pressure cook on high for 35 minutes.
- Bring together by sauteeing garlic and caramelized onions. Add the black eyed peas and smoked paprika.
- Plate with plantain and garnish with green onion.
