Lobster with lobster broth, mushrooms, lobster tail, dumplings, and snap peas.

Lobster
INGREDIENTS
- 1 ea. Lobster
- 1 ea. Bay leaf
- 1/2 an Orange
- 1 bunch Fresh thyme
- Water to fill pot
METHOD
- Bring water, herbs, and citrus to a boil.
- Place the lobster in and cook for 2 minutes. Remove and let cool.
Dumplings
INGREDIENTS
- Dumpling wrappers
- Lobster claw meat
- 1 tbsp. Mayo (approx)
- 1 tsp.Herb de provence
METHOD
- Blend claw meat, spices, and mayo.
- Fill and fold dumplings. Steam.
Broth
INGREDIENTS
- 1/3 Cup Greenmount Foods Lobster Stock
- 4 cubed Lobster mushrooms, sauteed
METHOD
- Saute lobster mushrooms.
- Bring lobster stock to a boil. Season and serve.
