Instant Tonkotsu Ramen

Instant tonkotsu ramen with tonkotsu powder, basic dashi, chasu glazed pork belly.

TONKOTSU POWDER

INGREDIENTS

  • Tonkotsu Broth
  • Pork Shanks or Hoofs & Head
  • thumb size piece Ginger
  • 1 ea. Onion, charred
  • Tonkotsu Powder
  • Chile Paste (optional)
  • La Tourangelle Garlic Oil (optional)
  • Garlic Powder (optional)
  • Soy Sauce (optional)
  • tt. Salt

METHOD

For the Tonkatus Broth:

  1. Place all the tonkotsu broth ingredients in pressure cooker and cook for 1 hour.
  2. Strain liquid into a pot and reduce by 1/3, until thick creamy liquid.

For the Tonkotsu Powder:

  1. Place tonkotsu broth (reserve some for chasu glazed pork belly) and remaining ingredients into a Vitamix Vita-Prep® 3. Blend on the highest setting for 1 minute.
  2. Pour blended liquid into a dehydrator at 140˚F for 24 hours.
  3. Once the tonkotsu broth is dehydrated break into shards and blitz into a powder with your Vitamix Vita-Prep® 3.

BASIC DASHI

INGREDIENTS

  • Kombu
  • Bonito Flakes

METHOD

  1. Depending on how many you’re serving, bring a pot of water to a boil with a piece of kombu scored across.
  2. As soon as the water boils remove kombu and add the bonito flakes.
  3. Let steep for a few minutes or until desired added amount of flavor. Strain and reserve dashi.

CHASU GLAZED PORK BELLY

INGREDIENTS

  • Pork Belly
  • Tonkotsu Broth
  • Soy Sauce
  • Sugar

METHOD

  1. Braised desired amount of pork belly with tonkotsu broth or stock.
  2. Slice and place in small pan and cover with just enough soy sauce.
  3. Add a tbsp. or so of sugar and reduce until glazed. Reserve.


TO ASSEMBLE

INGREDIENTS

  • Ramen Noodles
  • Green Onion (optional)
  • Boiled Egg Blanched Bean Sprouts (optional)
  • Sesame Seeds (optional)
  • Soy Sauce
  • Bonito Flakes

PLATING METHOD

  1. Place cooked ramen noodles onto a FOH® Harmony™ serving bowl.
  2. Pinch over ¼-½ c of tonkotsu powder over noodles.
  3. Pour dashi over powder and noodles until 2/3 of ramen noodles are covered.
  4. Add your favorite ingredients for garnish.
  5. Finish with a touch of soy sauce, bonito flake, and another pinch of tonkotsu powder on top. Why not?
