INGREDIENTS

  • Aquna Murray Cod

METHOD

  1. Fillet.

Strawberry Vinaigrette

INGREDIENTS

  • 1 part Strawberry balsamic vinegar
  • 1 part Olive oil
  • 2 parts Canola oil

METHOD

  1. Whisk.

Garnish

INGREDIENTS

  • 1 cup Strawberries
  • 1/2 cup Squash blossoms
  • 1/2 cup Lavender
  • 1/4 cup Chocolate mint
  • 1 tbsp. Green garlic

METHOD

  1. Dice the strawberries and squash blossoms.
  2. Place lavender, chocolate mint, and green garlic in a mortar and pestle and mash into a half paste.
  3. Toss with strawberries, squash, and vinaigrette.
