Truffled Leaks and NY Strip

NY strip, broccoli rabe, and truffled leeks.

Truffled Leaks

INGREDIENTS

  • 3 ea. Baby leeks, quartered and sliced
  • 1 cup approx. Cream, to cover
  • Black truffle shavings

METHOD

  1. Saute leeks for 2 minutes.
  2. Add in cream and reduce to thick consistency. F
  3. old in truffle shavings and quenelle onto the plate.

Sear a steak to desired temperature and saute some broccoli rabe in the steak fat.
