  • MIC Food Sweet Plantain


  1. Sear in a pan.

Black Eyed Peas


  • 1 cup Black eyed peas
  • 4 cups Water
  • 1 tsp. Cumin
  • 1 tsp. Paprika
  • 1/2 ea. Onion
  • 3 ea. Garlic cloves
  • Green onion


  1. Pressure cook on high for 35 minutes.
  2. Bring together by sauteeing garlic and caramelized onions. Add the black eyed peas and smoked paprika.
  3. Plate with plantain and garnish with green onion.
