Congratulations to the winners of the Brami Family Meal Contest! Chefs across the country were sent complimentary samples of Brami® Italian Pasta to use in making a creative, tasty, and fueling family meal for their team! We challenged these chefs to share their dishes with us for the chance to win an epic Chef’s Roll prize pack to share with their team consisting of a Meglio Chef’s Roll knife for the lead cook of the meal, plus a big box of Chef’s Roll swag including kitchen tools, wrist bands, sharpies, and knife rolls! We received so many incredible entries but these three chefs did an exceptional job at showcasing their Brami Family Meal for us. Congratulations again to our winners, and a big thank you to everyone who participated in this exciting program!
Chef Frank Mendoza of Sullivan’s Steakhouse
Garlic Butter Steak & Mushroom Brami Pasta
Brami pasta is tossed in a rich, savory garlic-butter sauce, allowing the pasta’s texture and flavor to shine while carrying every component of the dish. Tender pieces of steak are seasoned and seared to develop a deep caramelized crust, then combined with sautéed mushrooms, caramelized onions, and roasted tomatoes for layers of savory flavor, sweetness, and acidity. The dish is finished with fresh parsley and the steakhouse-inspired flavors come together in a hearty family meal designed to bring our kitchen team around the table.
“As chefs, we spend so much of our time focused on taking care of the guest, but it’s just as important to take care of the team behind the experience. Our team is the backbone of our operation and the people who connect with our guests every day. This family meal was an opportunity to step away from the daily grind, come together, and show our appreciation for the hard work they put in every day. When we take care of our team, they take care of our guests.
Each day, one team member is responsible for creating family meal, and today was my day. I wanted to create something hearty, comforting, and full of flavor using ingredients already available to us, including the trimmings from our hand-cut steak program. I turned those trimmings into a Sunday-gravy-inspired steakhouse pasta, with Brami pasta as the centerpiece of the dish.
For me, this dish represents what family meal is all about: taking what we have, cooking with purpose, highlighting a great product like Brami pasta, and creating something that brings our team together.”

Shakshuka Style Pasta Bake and Fusili with Cheese Sauce
“It was pizza Friday so I used the toppings for the pizza and the sauce to make the bake. Sautéed the Italian sausage, cremini mushrooms, spinach and fresh garlic w/ red pepper flakes. I mixed the sauce, pasta, proteins, vegetables and topped with 8 eggs. Wrapped it in plastic and steamed until the eggs were poached. Topped with cracked pepper, goat cheese and fresh basil. On another day I made a fresh jalapeno, diced onion, garlic, bacon, cheese sauce (American Cheese, Cheddar cheese, Swiss Cheese, S&P, paprika, Heavy Cream) with Brami Fusili!”
