In the 2021 Big Banana Plantain Month Recipe Contest, Chef’s Roll and MIC Food challenged chefs around the country to play up their plantains and use complimentary samples of Big Banana Plantains as the featured component of an original recipe creation.

It was amazing to see the celebration of plantain throughout this special month! However, the judges were forced to choose just 3 to be contest winners, based on the quality of the submissions in terms of dish originality, image appeal, and use of Big Banana product. A plantain-banana cake soaked in dark rum, then layered 2x with a hibiscus tea mousse, and candied plantains, covered with a white chocolate ganache and sour Cherry drizzle, mango tuilles, and a saffron infused mango sorbet
