Adobo Paksiw

Charred banana leaves, filled with caramelized plantain, rice, and paksiw pork loin.

Adobo Paksiw


  • 1 lb. Berkshire pork loin
  • 8 oz. Plantain
  • 1 qt. Soy sauce
  • 1 pint Vinegar
  • 1 pint Demi glace
  • 2 tsp. Palm sugar
  • 2 ea. Bay leaves
  • ½ cup Onion
  • 3 tbsp. Garlic
  • MIC Food Banana Leaves


  1. Sear pork loin and braise in mixture.
  2. Caramelize plantains.
  3. Roll in pork and plantains in banana leaf with white rice.
  4. Char banana leaf to infuse smoked banana flavor.
