Cottonseed Oil Caesar Salad

Croutons

INGREDIENTS

  • Sourdough or ciabatta bread, cubed
  • Cottonseed oil
  • Italian seasoning

METHOD

  1. Cube desired amount of croutons (approx. 2 cups is plenty).
  2. Toss in a drizzle or two of cottonseed oil and about 1 tbsp approx. of Italian seasoning, salt, and pepper to taste.
  3. Bake in the oven at 350f until golden brown

Chicken

INGREDIENTS

  • 2 ea. Chicken breasts patted dry

METHOD

  1. Add cottonseed oil in a pan.
  2. Sear the breast on both sides and finish in the oven at 350f until cooked through.
  3. Let rest and slice.

Caesar Dressing in a Jar

INGREDIENTS

  • 3 ea. Peeled Garlic Cloves, crushed
  • 4 ea. Individual anchovies, oil drained
  • 1 tbsp. Dijon Mustard
  • 1/4 cup Lemon juice, plus more to taste if desired
  • 2 ea. Egg yolks
  • 1/4 cup Grated Parmesan
  • 1 1/4 cup Cottonseed oil

METHOD

  1. Combine all ingredients in a wide-mouthed mason jar.
  2. Using an immersion blender, blend until dressing is smooth and creamy.
  3. Season to taste with lots of cracked pepper and salt as needed.
